Carrot cake is one easy and savory dessert that people can make all through the year. Both kids and adults are fond of carrot dessert. With all the spices and a luscious frosting, you can hardly resist this cake even if you do not like carrots. Don’t trust me? Okay, try this recipe.

For Carrot Cake

  • Flour – 2 cups
  • Baking powder – 2 tsp
  • Baking soda – 1 tsp
  • Cinnamon powder – 1 ½ tsp
  • Nutmeg powder – ½ tsp
  • Ginger powder – ½ tsp
  • Salt – ½ tsp
  • Brown sugar – 1 ½ cups
  • Eggs – 4, large
  • Vegetable oil – ¾ cup
  • Granulated sugar – ½ cup
  • Unsweetened applesauce – ½ cup
  • Grated carrots – 3 cups

For Cream Cheese Topping

  • Cream cheese – 8 ounces, softened
  • Unsalted butter – ½ cup, softened
  • Sugar powder – 2 cups
  • Vanilla extract – 1 tsp

How To Make Carrot Cake

  • Preheat the oven at 350 degrees Fahrenheit. Take tow round cake pans of 9 inches each and wrap them with parchment paper. This way, you can take out the cake after baking it easily. If you do not have parchment paper, you can also use cooking spray to grease the pans.
  • Take a big bowl and add the flour along with baking soda and baking powder, salt, ginger powder, nutmeg, and cinnamon powder. Mix them properly.
  • In another bowl, break the eggs. Add the oil, both granulated sugar and brown sugar, vanilla extract and apple sauce and mix them thoroughly. Now tip in the grated carrots in the egg mixture and fold in using a spoon.
  • Now pour this mixture of eggs and carrots into the bowl of flour and mix them properly. However, make sure that they are not overmixed.
  • When your cake batter is ready, pour them into the pans evenly and insert them into the oven. Bake them for about 35 minutes. When done, take the cakes out and keep aside so that they cool down.

Making The Topping

The cooling of the cake will take about 25 minutes. In the meantime, you prepare the cream cheese frosting. For that, you need to take the cream cheese in a bowl and beat it very well using the hand mixer. Now add the unsalted butter and beat again so that the mixture becomes smooth. Tip the sugar powder along with vanilla extract and continue beating so that the mixture becomes totally smooth. You might need to scrape the sides of the bowl during mixing.

Arranging The Carrot Cake Recipe

Take a cake knife and using it level the top surface of the cakes. If you have a cake stand, place one cake on it and top it with the cream cheese mixture. Spread it evenly using the knife. Now place another cake over the frosting and spread the leftover frosting on the top. Spread it evenly too.

If you have some cream cheese mixture remaining, you can coat the sides of the cake with it too. Your delicious carrot cake is ready. To make it more alluring, you can add some pecans on the top. Then slice it as you want and serve.
