Healthy Vegetarian Recipes For Kids

When it comes to kids, it is not easy to cook a perfect recipe for them because some kids like one food and gulp it in one go while others don’t even like it. Baked Vegetable Tacos

These vegetable tacos are pretty easy to make, and they are very crispy that almost all the kids will fall in love with them.

Ingredients

  • Zucchini – 1 medium-sized, diced
  • Olive oil- 1 teaspoon
  • Summer squash- 1 medium, diced
  • Yellow onion- ½ small, diced
  • Red pepper- 1 medium, diced
  • Black pepper- ½ teaspoon
  • Salt- 1 teaspoon
  • Black pepper- ¼ teaspoon
  • Refried beans- 1 ounce
  • Garlic powder- 1 teaspoon
  • Smoker paprika- 1/2 teaspoon (optional)
  • Paprika- 1 teaspoon
  • Corn Tortillas- 10-12
  • Optional toppings- depends upon what your child likes

Preparation

  • Heat the oven to 450 degree Fahrenheit.
  • Take a large pan, add olive oil, and heat it. Now add diced vegetables, pepper and salt to it. Fry until the veggies are softened. It will take 5-7 minutes of time at a minimum.
  • Now transfer the veggies to a large mixing bowl and add fried beans to it.
  • Heat the corn tortillas either in the oven or on the stove. Take one tortilla, add the vegetable mixture until one half of it and fold the other half.
  • Pat the tacos to make sure that everything is sealed in.
  • Now take a large microwave-safe pan and place each taco on it. Bake them until they turn brown and crispy. It would be better if you bake each side for ten minutes.
  • Let the tacos cool for some time and now add your kid’s favorite topping.

Sweet Potato And Vegetarian Meat Balls

The sweet potato and vegetable meatballs are definitely going to make a great option for snack or side dish.

Ingredients

  • Diced and peeled sweet potato- 2 cups, it may be about two large sweet potatoes.
  • Olive oil- 2 teaspoons
  • Cooked brown rice- 2 cups
  • Black beans- 1 can
  • Gluten-free bread crumbs- 2 tablespoons (you can go with gluten one too)
  • Flax egg- 1
  • Ground cumin- 1 teaspoon
  • Ground onion- ½ teaspoon
  • Garlic powder- ½ teaspoon
  • Paprika- 1 teaspoon
  • Salt- ½ teaspoon
  • Black pepper- ¼ teaspoon

Preparation

  • Preheat the oven to 320 degrees Fahrenheit.
  • Now take a sheet pan and add potatoes, a teaspoon of olive oil and pepper to it. Roast the potatoes until they are cooked.
  • Add the roasted potatoes, brown rice, and black beans to a food processor and blend until it attains a chunky texture.
  • Transfer this mixture into a large bowl and add bread crumbs, flax egg, cilantro as well as the species. Use your hands to mix them as it will be easier and effective.
  • With the help of a tablespoon, take a scoop of the mixture and roll them similar to the meatballs.
  • Now apply the breadcrumb coat on the ball and bake it in the oven at 400 degrees Fahrenheit. Make sure to apply olive oil to the skillet before putting it into the oven.
  • Flip meatballs occasionally and cook until they turn into brown color.
