Creamy Sauce Recipe

All ingredients can be combined in a saucepan and heated until all is dissolved. Whisking occasionally. Make sure to wait until the sauce has cooled down before pouring over the baking dish.

1 package of Silken Tofu (drained),

juice of 1/2 lemon,

1 tsp onion powder,

salt,

– 2-star anise pods

– 3cm piece of ginger (peeled and sliced thinly)

– juice of half a lime

– 2 tbsp soy sauce

– 1 cup flat rice noodles

– 2 handfuls of bean sprouts

– Small bunch of coriander (roughly chopped)

For the vegan beef flavored broth:

Combine all ingredients in a large pot and bring to a simmer. Allow simmering for around 10 minutes until broth is fragrant.

3. Vegan Red Lentil Chili:

This vegan chili is packed with beans and lentils, garlic, onion and has a spicy kick to it because of the added red chili. This dish goes great with some fresh cornbread (recipe below). Add in any other veggies you might like! You can use yellow or green bell peppers, carrots, green beans, or any other veggie you might like.

Ingredients:

– 2 tbsp olive oil

– 1 small brown onion (finely chopped)

– 2 garlic cloves (minced)

– 1 small red chili (finely chopped)

– 1 tsp ground cumin

– 1 tsp dried oregano

– 1 tsp salt

– 1 cup red lentils (rinse thoroughly)

– 5 cups vegetable broth/water

Ingredients:

– 2 tbsp olive oil

– 1 small onion (finely chopped)

– 2 garlic cloves (minced)

– 4 cups vegetable broth/water + some reserved for later if needed

– 3 cups broccoli florets & stems finely sliced or grated – get creative! You can also use other veggies like carrots, green beans, or any others you might like.

– 1 cup red lentils (rinsed)
