Mixed Vegetable Curry

This recipe will provide you the flavors, colors, and taste that you were lacking till now. Note down the ingredients and follow the directions:


  • Small pieces of mixed veggies – 1 pack
  • Olive oil – 1 tbsp
  • Tomato, diced – 1 can
  • Crushed garlic – 2 cloves
  • Tomato paste – 2 tbsp
  • Curry powder – 3 tbsp
  • Salt – to taste
  • Pepper – to taste
  • Vegetable bouillon – 1 cube
  • Fresh cilantro, chopped – 2 tbsp
  • Water – 1 ½ cups


  • Take a big saucepan. Put it on medium-high flame.
  • Add oil and fry the garlic and onion till they are golden in color.
  • Then add tomato paste and curry powder and stir for about 3 minutes.
  • Mix the tomatoes, mixed veggies, vegetable bouillon, salt, pepper, and water together.
  • Cook it for about half an hour till all the veggies are soft.
  • Take it down from the heat and garnish with chopped cilantro before serving.

Sweet Potato And Cauliflower Curry

The specialty of this recipe is that here you can add red potato instead of sweet potato and broccoli instead of cauliflower. In one word, you can make it with any combination that you like.


  • Cauliflower – 1, cut into florets
  • Medium size Sweet potato – 3, diced
  • Coconut milk – 1 cup
  • Peas – 1 cup
  • Vegetable stock – 2 cups
  • Medium size Tomato – 2, chopped
  • Lime juice – 1 tbsp
  • Cilantro – 1 tbsp, finely chopped
  • Onion – 1, chopped
  • Tomato paste – 2 tbsp
  • Garlic – 4 cloves
  • Grated ginger – 1 tbsp
  • Olive Oil – 2 tbsp
  • Cumin powder – 1 tbsp
  • Coriander powder – 1 tbsp
  • Salt – to taste
  • Cayenne – 1 tbsp
  • Pepper – to taste


  • Take a large pan and put it on medium-high flame. Add oil and once the oil is hot, fry the onion till it is golden.
  • Lower the flame, add the garlic and ginger and fry for 1 minute.
  • Now add all the grounded spices and mix it well.
  • Now add the tomato paste and cook for another 1 minute.
  • Next, pour the coconut milk, vegetable stock, salt, and pepper.
  • As the boiling starts, reduce the heat and simmer it for about 10 minutes.
  • Mix the cauliflower, tomatoes, potatoes, and peas. Give it a boil by increasing the heat.
  • Lower the flame and simmer till all the veggies are cooked well.
  • Add the lemon juice and stir well.
  • Sprinkle the chopped cilantro on the top and serve it with rice.
